Foodie Friday: You Only Have 15 Minutes And No Lunch. What Do You Do?

I promised my husband a wonderful home-cooked lunch, but I got caught up working on a painting that didn’t go anywhere. The clock on my computer read 11:43 AM. I only had seventeen minutes before he came home on his lunch break. Some fast thinking was in order. Here’s what I did:
- I boiled a chicken sausage in four cups of water.
- While the chicken sausage boiled, I cut up a leftover baked potato, steamed some carrots in the microwave and fried some onions.
- Once the water was boiling, I took the sausage out and sliced it. Then I threw it back in the water with the carrots, onions and potatoes.
- I tossed in some spinach.
- I added in some rice noodles and boiled everything for three minutes.
- When the noodles were almost done, I threw in some Knorr Homestyle Stock concentrate. By the time my husband arrived, a filling, delicious and hearty soup awaited him.
- Knorr Homestyle stock concentrate dissolves much faster than bullion cubes, takes up less space than can or boxes, and it actually tastes decent.

where did you find those noodles? i’ve never seen anything like that in the stores.
I found them in the Asian section at my grocery store. They also have them at Target.
